This may sound strange but this weight loss lasagna recipe contains no pasta (lasagna) by leaving the pasta out you shave off so many calories, like most pasta dishes that’s where most calories are found and they are not the best of calories either nor does it offer much nutritional value.

You’re probably wondering if this lasagna recipe doesn’t contain pasta then what’s going to be the secret ingredient to replace it?

The secret ingredient is packed full of powerful vitamins, minerals and tastes delicious. Ok let me tell you what the magic ingredient is…. leeks

That’s right for this “skinny” Lasagna recipe we swap the pasta with leek, keep reading and I will show you how!

Before I tell you the uplifting recipe I want to just tell you about some of the other items and there goodness.


Why Make A Weight Loss Lasagna

Besides the obvious of eating good food to lose weight the food items that go into this dish are packed full of goodness for you and the family see below some of the amazing benefits.

Beef – Classed as a red meat and contains high amounts of protein that’s proven key to losing body fat, beef also is low in carbohydrates that are proven to store as fat deposits when you don’t burn them off.

Beef is also known for its high amounts of good fats, iron and zinc that should be part of any healthy diet!

Leek’s – Naturally low in calories and high in vitamins and minerals. Leek’s help in protecting blood vessel lining, supports good heart health and can protect against certain types of cancer.

Onion – Great vitamin C boost to help with immune system function. Onions also help regulate blood sugar due to a compound called chromium, on top of this for centuries the onion has been used to fight inflammation.

Celery – Another low in calorie’s but high in vitamins and minerals vegetable. Celery may be mostly water content but it’s high in dietary fibre, something most of us don’t get enough.

Garlic – So many benefits to adding garlic to your dishes, lower blood pressure, combat cold, lower cholesterol, helps prevent dementia and alzheimer’s disease, promote bone strength, slow down the ageing process and boost athletic performance.

Tomato – Been linked to reducing the chances of certain types of cancer’s especially pancreatic cancer

How To Make Leek Lasagne

On your next food shop you are going to need to pop some new items in your basket to make this treat of a dish.

Ingredients 

  • 500g extra lean minced beef
  • ½ medium white onion finely chopped
  • 2 medium leeks
  • 2 sticks of celery finely sliced
  • 2 carrots peeled and diced
  • 2 cloves of garlic crushed
  • 150g chestnut/closed cup mushrooms
  • 400g tin of chopped tomatoes
  • 2 tbsp tomato puree
  • 1 tsp mixed herbs
  • 100g fat-free natural cottage cheese
  • 80g primula light soft cheese
  • 45g reduced fat mature cheddar grated
  • 1 egg
  • 1 oxo cube
  • 2 large fresh tomatoes sliced
  • Salt and fresh ground black pepper
  • Dash of cayenne pepper

Method

Now for the fun part, grab yourself a large sauce pan and start with browning your mince once the mince is browned throw in your garlic, celery, and carrot making sure you break up any lumps of mince. Ensureivegetablesles are soft.

Now that the mince is broken up and vegetables softened add the mushrooms, tomatoes, tomato puree, oxo cube and mixed herbs giving them a good stir and then pop the lid on and allow to simmer returning to stir from time to time until the carrots are nice and tender. When stirring add the salt and pepper.

Take your leeks and cut the ends off and trim them to the size of your lasagna tray, now carefully slice the leeks lengthways until you reach the middle, now separate the leaves and remove the 4/5  these are what will replace your lasagna sheets, with the leftover leeks add these to your saucepan.

With the trimmed leaked leafs cook in boiling water for 5 mins, once cooked drain the pan and then lay your leak leafs flat and dry with kitchen roll.

Preheat your oven to 180 degrees celsius. place your egg, primula and cottage cheese in a jug and blend until you get a nice smooth consistency. Season with salt cayenne and black pepper.

Take an oven proof dish and put half of your mince in and then top with your leak sheet and repeat. For the finishing touch pour over your cheese sauce top with tomato and some grated cheese.

Now pop your dish in the oven and cook for 15 mins.

This is a real family treat and will serve 6 if you don’t have 6 mouths to feed then you can simply freeze up to a month.
